The Perfect Spiced Roast Chicken

This roast chook is absolutely scrumptious and so easy! It's bursting with flavour from the skin all the way into the flesh. Our Indian BBQ Rub is perfect for it. This is a Christmas dinner must have! 



Whole Chicken 




Olive Oil 

Fresh Red Chilli (Optional) 

Curry Traders Indian BBQ Rub 


  1. Preheat oven to 250 degrees. 
  2. Make sure the chicken is at room temperature and pat it dry with a paper towel. 
  3. Prep your chicken by cutting out the wishbone, and breaking the hip bones. 
  4. Add 150g of room temp butter and 2 tablespoons of our Curry Traders Indian BBQ Rub together until combined. 
  5. Create space between the chicken and the skin, and rub the butter mixture in between all over the top of the chicken. We like to then add an extra sprinkle of the rub ontop of the chicken for extra flavour on the skin. Drizzle a bit of olive oil on top to stop the rub from burning and a big pinch of salt. 
  6. Cut your lemon in half and pop it inside the chicken, along with a large handful of washed coriander and chilli slices (optional) 
  7. Tie the legs together to keep everything secure inside. 
  8. Turn down your oven to 180 degrees and pop your chicken in for 1-1.5 hours depending on the size of your chicken. Cook until supple and moist. 
  9. Once cooked let rest for 15-20 minutes. While resting squeeze the lemon into the baking tray and spoon over the lemon/chicken juices to get an even more juicy and flavourful chicken! 
  10. Serve with roast veg and top with fresh coriander! YUM!
