Spiced Roasted Pumpkin w/ Green Chutney

This Spiced Roasted Pumpkin is an absolute show stopper for any dinner party, but it's also amazing as a vegan/vegetarian option for Christmas lunch! Not only is it delicious it's also super easy and only takes 30 minutes to whip together. Have it on it's own or serve with a fresh green chutney! 

 

INGREDIENTS

1/4 KENT PUMPKIN
OLIVE OIL
FRIED SHALLOTS
FRESH CHILLI
CURRY TRADERS INDIAN BBQ RUB
SALT & PEPPER

METHOD

  1. Preheat oven to 200 degrees RINSE & DE-SEED your 1/4 pumpkin.
  2. Pat any excess water off and slice 3-4 wedges of pumpkin. in a large baking tray place your pumpkin wedges flat. generously drizzle them with olive oil.
  3. Then add roughly 1-2 TBSPN of Indian bbq rub to the pumpkin and with your fingers massage this in. Add a pinch of salt and pepper. Then flip and repeat the other side.
  4. Chuck that into the oven for roughly 30 mins or until golden and tender. Serve hot or cold topped with slices of fresh chilli, fried shallots & Fresh Green Chutney.
