Chicken with Asian BBQ Rub Ingredients
- 2 whole Chicken Breasts
- 30g butter
- 1 tablespoon lemon
- 3 Tblsp Curry Traders Asian BBQ Rub
- 220 g coconut milk
Line baking tray with baking paper. Arrange chicken breasts in the baking tray.
Place butter in the tray, cover chicken with lemon juice and 2 tablespoons of Curry Traders Asian BBQ Rub.
Cover dish with aluminum foil, bake in a moderately hot oven for 20 mins or until chicken is tender (cooking time will vary depending on the thickness of chicken). Turn oven off.
Heat a heavy based saucepan on the stove top. Add the juice from the chicken to saucepan. Reseal foil and place chicken back into the oven.
Reduce remaining juice to 4 tablespoons by simmering over a gentle heat. Add ! tablespoon of Asian BBQ Rub to juice and stir gently. Slowly add coconut milk, stirring until mixture is consistant. Do not boil.
Remove chicken from oven and plate. Pour spiced coconut mixture over chicken.
Serve with steamed greens/rice or any sides of your liking.
This is a medium –hot spiced dish.
